Bánh Xèo Vietnamese Pancake Cooking Tips

The key to making a Banh Xeo extra crispy is to use a high quality non-stick pan like this Ninja Foodi NeverStick stainless steel that bakes and browns like a cast iron. It's guaranteed to never stick, chip or flake! I mean, look at that nice crispy char!

What Is Bánh Xèo?

Bánh Xèo is a savoury pancake crepe in Vietnamese cuisine. These crepes are meant to be eaten with fresh herbs like mung bean, sprouts, green onions and mint. Bánh Xèo fillings often consist of pork and shrimp and dipped in a spicy fish sauce called nước cham.

Dairy-Free and Egg-Free Pancakes

These crispy crepes look quite like an omelette, but there are no eggs in the recipe. The yellow colour comes from turmeric powder.

Combined coconut milk with the Bánh Xèo flour to form the batter.

What is Bánh Xèo Flour?

Bánh Xèo flour is simply rice flour, all-purpose flour (or gluten-free flour) mixed together with sugar, salt, curry powder, and turmeric powder.

Vegan Bánh Xèo

Bánh Xèo can easily be turned into a vegan dish by swamping out the traditional Bánh Xèo fillings of pork and shrimp. Opt to stuff your crispy eggless pancake with a ton of mushrooms (I find king oyster mushrooms and shimeji mushrooms work best), firm tofu, vegan shrimp, seitan bacon and even tempeh is incredible!

Sometimes, I think this plant-based vegetarian Vietnamese recipe is tastier than the traditional crispy crepes.
