ThisCatalan Spinach Flatbread recipe is super easy to make and it´s the perfect tapas appetizer for any occasion. It´s loaded with Spanish flavor, made with simple ingredients and can be served as an appetizer or even a main course. This flatbread is called ¨Coca de Espinacas¨ in Spanish and hails from the region of Catalunya in northeastern Spain. Cocas are very similar to pizza except they have no cheese and you can top them off with just about any ingredients you can think of. Traditionally this spinach flatbread is topped off with raisins, but I much prefer dried cranberries, they have a better texture and add a better flavor to the flatbread.
– How to Make Catalan Spinach Flatbread –
You have a couple of different options to make this Catalan Spinach Flatbread Recipe. I made my own dough (which is like insanely easy to make!) and added white wine to it, just because it adds another dimension of flavors to this flatbread. If white wine is not your thing you can substitute it for water. Alternatively you can use store bought pre-made pizza dough to make this flatbread. Either way you go this is a very easy recipe to make. Watch the video below on How to Make this Catalan Spinach Flatbread Recipe or check out the recipe card below, which you can print. Salud!
Equipment I Used to Make this Recipe:
Non-stick Frying Pan

To make the dough add 1 cup of all-purpose flour into a large bowl, also add 1 teaspoon of baking powder, 1/2 a teaspoon of sea salt and a 1/4 teaspoon of white sugar, mix the dry ingredients together, then add 1 tablespoon of extra virgin Spanish olive oil and a generous 1/3 cup of white wine and mix everything together until you form a dough, then get in there with your hands and start kneading the dough inside of the bowl until you form a smooth dough and then shape it into a ball
Sprinkle some all-purpose flour into a flat surface and add the ball of dough on top, using the heel of your palm start gently pushing down on the dough, then start rolling it out, you want a rectangle design with a thickness of about 1/8 of an inch, then transfer the rolled out dough to a baking tray lined with parchment paper
